Breakfast Delight

I love breakfast but I'm not big into large breakfast during the week. Come the weekend....bring it on!

What you'll need:

  • Beans (of your choice. Here I used black beans)
  • Kale
  • Eggs
  • Onion
  • Cilantro
  • Greek Yogurt
  • Go Veg Cheese (optional)


  1. In a pan cook the black beans
  2. In the bean pot, throw in pieces of kale - as much as you want
  3. Scramble eggs in a separate pan, add cheese of choice if you want to. Add in chopped onions. Season with salt and pepper
  4. Place bean and kale mix in a bowl, top with scrambles eggs, add a scoop of greek yogurt and top with cilantro.
