I'm not quite ready to let go of summer even though we are quickly approaching fall, so I wanted to share one last (maybe) colorful and refreshing recipe! There's no rule that says this can only be made in summer so bring it on autumn!
Quinoa salad and avocado are super yummy, so why not put them together? Mix up this recipe for an easy and delicious lunch or dinner.
What you'll need:
- One avocado
- Garlic, salt, pepper and any other spice you may enjoy!
- Slice the avocado in half and remove the pit.
- Cook the quinoa and mix in the other ingredients.
- Load up each half of the avocado with your quinoa salad.
Best part about this recipe? It's quick and can easily be changed in terms of the ingredients added to your quinoa salad. Switch it up and enjoy this meal a couple times a week!
