Roasted Garlic and Turmeric Hummus Recipe

I’ve been TRYING to make time to cook on Sundays for the week. Hard boil some eggs, pre-package my smoothies, yada, yada. This week I wanted to try to make a hummus because it is one of my favorite healthy snacks, paired with some carrots or little crackers. I must say, for a first timer with no recipe, it came out pretty de-lish!

What you’ll need:

  • 2 cans garbanzo beans - i had the ready to eat kind in my cabinet so thats what i used

  • 1 full clove of garlic

  • Olive Oil

  • Tumeric

  • Onion Powder

  • Garlic Powder

  • Salt & Pepper

  • 1 Lemon

Directions

  • Preheat oven to 350

  • Leave them bundled together but peel the garlic clove down until there is just one layer of skin over each pod.

  • Make 1 slice to trim off the top so you can see the garlic in each pod

  • Place on baking sheet & drizzle with olive oil

  • Bake at 350 about 35 minutes or until garlic becomes soft and can be squeezed out of pods

While garlic is roasting:

  • Rinse garbanzo beans clean from juice in can

  • Place in food processor and blend

  • Add Juice of 1 lemon

  • When garlic is done, remove from pods and place in food processor & blend

  • Sprinkle in (to taste):

    • Tumeric

    • Onion Powder

    • Garlic Powder

    • Salt & Pepper

I added a lot of tumeric but its up to your taste buds. I left half at home for the hubby and brought half to the office with cut up carrots and celery. Nom Nom!
