Egg White Cups

Ok so maybe it's too late for today, but here's a great breakfast idea for you tomorrow! Best part?  You can easily make enough for Thursday and Friday! Egg white cups are a quick and easy way to have a piping hot breakfast at the office or on-the-go for the whole week! Save time in the morning and make these little guys at night or on the weekend.

What you'll need:

  • Veggies of your choice (I use peppers and onions)
  • Cheese of your choice
  • Egg Whites

Directions:

  1. Chop veggies
  2. Fill muffin tins with egg whites (4 eggs per cup)
  3. Add chopped veggies
  4. Sprinkle with cheese

I put two egg white muffins in a plastic bag and freeze them, then their easy to grab on the go! Bring to work and stick em in the toaster oven or microwave. I stick mine in a bowl and cut them up like scrambled eggs, top with salt and pepper and enjoy myself a nice, hot workday breakfast of protein and veggies! 

I decided to make these because I recently started the 21-day fix! I must say, I don't usually stick with these kinds of things BUT I did this time and while I did lose a few pounds, more importantly I feel more energized, active and lighter!
