Coffee Smoothie!

I'm a big fan of smoothies and an even bigger love of coffee so you can imagine my excitement when I stumbled upon a "healthy coffee smoothie" recipe from PopSugar. I gave it a try and it is absolutely DELICIOUS! Plus, it's low in calories and high in protein, keeping you full and energized for your busy weekend. Calling all coffee-lovers to give this one a try!

What you'll need:

  • 1 cup of cold-brew coffee (I use the one sold at Trader Joe's, but Stumptown also makes a yummy one and there are several options sold at Whole Foods)
  • 1 scoop of chocolate protein powder (I use the Vega chocolate because it's clean and plant based)
  • 1 cup of unsweetened almond milk
  • 1/2 cup of low-fat yogurt (or greek yogurt)
  • 1/2 avocado
  • 5-8 ice cubes (depending on how thing/ thick you like your smoothie)

Optional:

  • A splash of maple syrup for taste
  • Cocoa or raw shredded coconut nibs for a fancy garnish

Directions:

  • Simply combine all ingredients in a blender and blend until smooth! Cheers
