Chia Seed Energy Bars

Last week we shared a post about the benefits of chia seeds and I mentioned sprinkling them on your yogurt as a way to work them into your diet, but there are some other more exciting and tasty ways to use these little seeds.

Try these Chia Seed Energy Bars! These bars are perfect for making on a Sunday and eating throughout the week as you are rushing to work, the gym, the kids, etc. These energy packed bars will give you the tasty nutrients you need, without adding in all the other junk that may come in some store bought bars.

What you’ll need:

  • 6 large dates

  • ½ cup of chia seeds

  • 2 tablespoons of coconut oil

  • ½ teaspoon of cinnamon

  • 2 tablespoons of dark chocolate chips or dried fruit or shredded raw coconut (depending on what kind of mood you’re in!)

  • Also, feel free to add some 2 tablespoons almond butter in there for added taste and texture

Directions:

  1. Remove the pits from the dates and blend the dates in a food processor or a blender

  2. In a bowl, mix the blended dates and all the other ingredients until everything appears to be mixed evenly.

  3. In a glass-baking dish, press the mixture to the bottom of the dish. Note: Try to press the mixture down lower than one inch, or your bars will be very thick!

  4. Place in the refrigerator or freezer until the mixture hardens just a bit.

  5. When it is ready, remove the glass-dish and cut bars. Note: I usually try to make my bars about 1.5 inches wide and 3 inches tall (the size of a typical granola bar).

  6. For safekeeping and on-the-go convenience, wrap each bar in saran-wrap.

  7. Store in the refrigerator and grab one at your convenience!
