Moroccean Eggplant

This Thanksgiving, my husband and I were lucky enough to travel to Morocco. We ate some interesting food, mostly chicken tagine with sides of eggplant, carrots and lots and lots of bread!

I usually don't eat eggplant, it's just never been my favorite, but Moroccean style is amazing. Here's the recipe:

What you'll need: (keep in mind there was no measuring while we took this cooking class)

  • Eggplant
  • Olive Oil
  • Garlic
  • Cumin
  • Salt
  • Vinegar
  • Chilly


  1. Peel the eggplant
  2. Cut into round slices
  3. "Fry" in a pan of olive oil until golden on both sides
  4. Remove from oil and mash
  5. Add spices to taste
