Chocolate Covered Banana Coconut Bites

Yesterday when my sweet tooth kicked in i knew i wanted to make those paleo cookie balls that were previously posted so I started rummaging through the cabinets to see what ingredients I had. Turns out I didn’t have all of them, so this is what i made…..

What you'll need for the inside:

  • 1-1/2 cups unsweetened coconut flakes

  • 1/4 cup coconut oil, melted or softened

  • 2 Bananas mashed

  • 1 teaspoon pure vanilla extract

What you’ll need for the outside:

  • 1/4 cup coconut oil, melted or softened

  • Coco powder (I used organic, no sugar added)

  • Coconut crystals or some other kind of sweetener you enjoy. I imagine maple syrup would be yummy

  • Sea Salt

Inside Directions:

  1. Combine all the ingredients,

  2. Roll out into bite size balls (about 1 inch).

  3. Stick in thefridge while you prepare the chocolate coating

Chocolate Coating directions

  1. Melt ¼ cup coconut oil

  2. Add 2 - 3 heaping spoonfuls of coco powder (to taste)

  3. Add sweetener (to taste)

  4. Roll banana balls into the coating one at a time

  5. Place on dish and sprinkle with sea salt

  6. Place back in fridge for chocolate to harden

Enjoy, but dont leave them unattended for too long, my husband snatched up the last couple before i knew it!
