Paleo Pudding

What you'll need:

  • 1 can coconut milk (I used the light version)
  • 2 Heaping tablespoons of Almond Butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • Optional - 1 T. Hemp Seed
  • 1/4 cup chia seeds



  1. Add all ingredients except chia seeds into a bowl and blend or mix well
  2. Place into resealable container (I split my mix into two or three single portions)
  3. Add chia seeds, seal jar and shake
  4. Leave in fridge overnight, if you plan to eat more quickly, place in freezer for about 30min
  5. Top with whatever you'd like, preferably fruit, I used peaches
