Creamy Cauliflower Soup & Grilled Cheese

What you'll need:

  • 2 T. Butter
  • 1 T. Arrowroot
  • 1 Head cauliflower chopped - I put mine in a food processor and ground it down like rice before adding to the soup
  • 1/2 Onion chopped
  • 4 Cups fat free chicken broth
  • Salt & Pepper
  • Focaccia Bread
  • Havarti Cheese
  • Avocado
  • Ground Cinnamon (optional)
  • Ground Ginger (optional)

Directions for soup:

  1. In a saucepan, melt 1T. butter on low low heat for about 2 min. Once melted, add in the arrowroot and mix well
  2. Once thick, add the chicken stock, onions & cauliflower
  3. Add salt & pepper to taste
  4. I added cinnamon and ginger to give it that nice fall taste
  5. Cook for about 20 min until veggies are tender


Directions for grill cheese:

  • Cut focaccia in half length wise
  • slice cheese and avocado thin
  • Build sandwich
  • Put a small amount of butter into heated pan, place sandwich on top and smoosh down with spatula
  • Turn when ready


* My soup came out a little chunky but  delicious. Next time, I will try it in the crockpot and let it cook all day so the veggies boil down and its just a creamy soup. The grill cheese was amazing but kind of kills that low cal factor
