Starbucks Cupcakes

I made these for a friends birthday, she is a Starbucks feen and I thought she'd be amazed... I was right!

What you'll need:

  • White Cake Mix + Ingredients on box
  • Muffin Tin
  • Wrappers
  • Honey, Caramel, or Chocolate sauce

Coffee Cake Mix

  • 1/4 C. Almonds (chopped)
  • 1/3 cup         brown sugar         (packed)
  • 2 tbsps         butter
  • 1 tsp         cinnamon

  • 4 sticks (1 pound) unsalted butter, softened
  • 6 cups sifted confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1 pinch of salt
  • Frosting tube

Cupcake Holder:

  • Long Green Straws
  • Starbucks cup holders
  • Glue Gun
  • Scissors

  1. Melt butter and in small bowl mix together all of the coffee cake mix ingredients, put aside
  2. Make cupcakes via directions on the back of the box
  3. Line muffin tins with wrappers
  4. Fill each wrapper half way
  5. Add a scoop of coffee cake mix
  6. Fill the wrapper the rest of the way with cake batter
  7. Add a scoop of coffee cake mix to the top
  8. Bake as directed on the back of the cake mix box
  9. Let cupcakes cool over night

  1. Put butter in bowl of an electric mixer. Beat on medium-high speed until pale and creamy, about 2 minutes. Reduce speed to medium; add sugar 1/2 cup at a time, mixing well, about 5 minutes total. Add vanilla and salt. Raise speed to medium-high; beat until smooth, about 1 minute more.
  2. Scoop frosting into the frosting tube

Note: I made the icing the night before, if you do this, leave it on the counter overnight or it will harden like a stick of butter in the fridge. It would be best to make frosting the day of.

Cupcake Holder

Let me start by saying that I drank a LOT of coffee the week before to have enough of these things - lol! Second, they are not the right size to hold a normal cupcake so you have to rip them apart and glue them back together.

  1. Tear the glue apart down the seam of the cup slip
  2. Cut a small strip off the top and a small strip off the bottom so that it is about the same height as a cupcake wrapper
  3. There are three sections of the cup holder, hot glue the first section over the third section
  4. Hold until dry
  5. Cut the long strays into 3rds or 4ths

  1. Place cup cake into cupcake holder
  2. Swirl on the frosting
  3. Stick in fridge for a few min to let frosting harden on the outside
  4. Drizzle with chosen topping, I used honey on some and chocolate sauce on others
  5. Stick with straw

It seems like a lot but if you make the holders the week before, its really not that much more work than regular cupcakes.  They are very sweet but everyone loved them!
