Vegan/Sugar Free Scrumptious Banana Muffins

This came out way more scrumptious than I EVER would have expected!

What you'll need:

Organic....

  • 1/2 C. Almond Flour
  • 1/2 C. Coconut Flour
  • 3/4 C. Whole Wheat Flour
  • 1 t. Baking Soda
  • 1/2 C. Coconut crystals (if you want it sweeter add more to taste)
  • 1/2 C. Chopped Walnuts
  • 1/4 C. Applesauce
  • 1/4 C. Vanilla Coconut Yogurt (SO)
  • 1/2 C. Canola Oil
  • 1-2 T. Vanilla Extract - to taste (I Used vanilla bourbon extract - YUM)
  • 2 Bananas mashed (can be replaced with any fruit of chice)
  • 3 T. Honey
  • 1 Eggs worth or Orgran Egg Replacer  (follow directions on package)

Directions:

  1. Mix together dry ingredients & nuts
  2. In a different bowl, mix together remaining ingredients
  3. Slowly beat dry ingredients into the other bowl - leave fruit chunky
  4. Either grease up muffin tin or use cupcake foils
  5. Fill tins with batter
  6. Bake at 350 for 30 minutes

These are a must try!

Notes for next time: The oil had the most calories but it also kept the muffins REALLY soft, maybe I could try cutting in half.  Next was the coconut flour, next time maybe I'll try all almond flour and cut out the gluten
