Sweet Potato Sliders

We all know i like quick and easy, I don't usually have time to recipes that take forever but since we were on vaca for New Years I decided to give it a shot.  I thought they were just ok, they needed a little more flavor and it was kind of a hassle to put together.  Here is the recipe I followed:

What you'll need:

Burgers

  • 2 Cups mashed sweet potatos
  • 1 Cup Cannellini beans
  • 2 garlic cloves (minced)
  • 1/3 Cup Panko bread crumbs
  • 1/3 Cup Oat Flour
  • 1 Large egg
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • .5 teaspoon pepper
  • 1/8th teaspoon cumin
  • 2 Tablespoons Olive oil

Spread

  • 2/3 Cup plain green yogurt
  • 2 blubs roasted garlic
  • 1 teaspoon maple syrup

Other

  • 1 Avocado
  • Tomato
  • Cucumber
  • Lettuce
  • Slider Buns

Directions:

Prep:

  1. Roast Garlic bulbs
  2. Cook sweet potatos until soft
  3. Remove sweet potatos from skin and mash
  4. Mash the beans

Burgers

  1. In a large bowl, combine all of the burger ingredients except olive oil
  2. Mix well
  3. Scoop out enough to roll into a small ball and squish into a patty
  4. Cook burgers in a skillet with olive oil until lightly browned on both sides

Spread

  1. In a small bowl, combine the spread ingredients and blend until smooth.
  2. Add salt & pepper to taste
  3. Place in fridge

Other

  1. Toast buns
  2. Layer with the yogurt spread
  3. add the sweet potato pattie
  4. Top with any other ingredients you like - avocado, lettuce, tomato, etc.
