Summer Snap Salad

Mmmmm...this salad is so delicious and nutritious!  Perfect for a hot summer day!

What you'll need:

  • 1 C. Sugar Snap Peas
  • 1 C. Bean Sprouts
  • 4 Mint Leaves
  • 2 T. Red Onion
  • 1/4 Lemon
  • 1 T. Olive Oil

Directions:

  1. Boil water
  2. Rinse all veggies
  3. Chop onion & mint leaves
  4. put snap peas in boiling water for 2 minutes, drain and rinse under cold water, place in fridge
  5. Cut off the ends of the snap peas and then slice into four or more thin slices
  6. In a bowl, combine onion, sprouts, mint, snap pease, olive oil and the juice from the lemon
  7. Toss, chill and serve cold
