Southwest Veggie Burger

What you'll need:

  • 16oz black beans
  • 8 oz corn
  • 8 oz Chopped Spinach
  • 1/4 onion (chopped)
  • jalapeno (chopped)
  • Pinch Chili powder
  • Pinch Onion Powder
  • Pinch Garlic Salt
  • Pinch Black Pepper

Directions:

  1. Wash and drain beans
  2. Put in mixing bowl and mash with a fork
  3. Drain and wash corn, add to mixing bowl
  4. Break up frozen spinach and add to bowl
  5. Chop onion and jalapeno and add to mixing bowl
  6. Add bread crumbs
  7. Add spices to taste
  8. Roll into balls, smush into patties, wrap in plastic wrap and freeze
