Red Quinoa Stuffed Bell Peppers

What you'll need:

  • Quinoa - I used red but you dont
  • 2 Bell Peppers
  • 1/2 lb Ground Beef - I had left over ground beef from a taco dip I made the day before, but you dont have to use meat - I bet it would actually be great with diced tofu
  • 3 Scallions
  • 5 Raddishes
  • 1 packet taco seasoning
  • Fresh cilantro


  1. Follow directions on box to cook quinoa
  2. Wash all veggie
  3. Slice raddishes & Chop scallions and cilantro - set aside
  4. Cut bell peppers in half, remove and discard guts, rinse, place in baking pan, drizzle with cold pressed olive oil and sprinkle with pepper
  5. Bake bell peppers at 350 until tender (10 min or so)
  6. When quinoa starts to boil, add raddishes to pot
  7. If you are adding meat, brown the ground beef and add whatever spices you like - mine had taco seasoning
  8. When finished cooking add scallions and cilantro to quinoa pot
  9. Drain extra oil from beef and mix with quinoa
  10. Remove peppers from oven
  11. Stuff peppers with quinoa mix and serve!
