RAW: Cucumber, Avocado, Cilantro Gazpacho

What You'll Need:

  • 1 Cucumber
  • 1 Avocado
  • A handful or so of Fresh Cilantro
  • 1 Garlic Clove
  • Himalayan salt (or regular but I like this kind)
  • Pepper
  • 1 Lime
  • 3 Scallions
  • 1-2 cups of water

 

Directions:

  1. Wash all veggies - ALWAYS
  2. Cucumber - Leave skin on but remove seeds. I did this by slicing in half the long way and then taking a spoon and running it down the inside of the cucumber and then slicing very very small.
  3. Avocado - Remove from skin, remove pit, and slice.
  4. Chop cilantro, garlic and scallions
  5. Add salt and pepper to taste, the juice of 1 lime and 1-2 cups of cold water
  6. Throw everything in a blender and liquify
  7. Garish with a few slices of cucumber, cilantro and pepper
  8. Chill until at the desired temperature
