Quinoa Patties

What you'll need:

  • 1.5 Cups Quinoa Plain or veggie (I used veggie already seasoned)
  • 4 Scallions
  • 1/4 Red Onion
  • Oil
  • Orgran No Egg
  • Spices to taste if you use plain quinoa

Directions:

  1. In one sauce pan, boil 3 cups of water
  2. In another saucepan,drizzle with oil ( I used walnut oil) and toast the quinoa
  3. Mix boiling water in with toasted quinoa - cover & cook about 15 minutes until water is absorbed
  1. While quinoa is cooking wash and chop veggies and place in a bowl
  2. Add Ener-G Egg replacer to be equivilent with 3 eggs (6 T. water & 3 t. of egg replacer)
  3. Add cooked quinoa
  4. Mix well and let cool ( I stuck mine in the freezer for 10 minutes to speed things along)
  1. Coat frying pan with oil (I used olive oil spray - like Pam)
  2. Roll mixture into small balls and flatten into patties
  3. Lay patties out in frying pan and top with salt & pepper to taste
  4. Cook on one side, flip and cook the other
