Mimosa Jello Shots

These came out OK - my only complaint was that they weren't sweet enough.

What you'll need:

  • 2 boxes (each with 4 packets) clear / plain gelatin (try whole foods)
  • 1 C. OJ
  • 1 Bottle Champagne
  • 2 C. Sugar
  • 1 C. Water
  • Orange Vodka
  • 1/2 Grapefruit

Layer 1:

  1. Heat 1 C. of water in the microwave until boiling
  2. In a seperate bowl pour a cup of OJ and 1 cup of orange vodka
  3. Sprinkle 1 BOX of gelatin (4 packets) over the Ocold liquids
  4. Mix in the boiling water
  5. Stir until gelatin dissolves
  6. Pour into pan
  7. Place in fridge

Simple Syrup:

  1. Mix 2 parts sugar and 1 part water in a sauce pan
  2. Bring to a boil
  3. Dissolve sugar

*You may choose to make more of this since I thought they needed to be sweeter

Layer 2:

  1. Heat 1 C water in microwave until boiling
  2. In another bowl pour 1 bottle of champage (could also get a sweeter champagne instead of Prosecco which is what I used)
  3. Squeeze in half a grapefruit
  4. Sprinkle in 1 BOX of gelatin
  5. Mix with boiling water and simple syrup
  6. Stir until gelatin dissolves
  7. Pour on top of first layer
  8. Place back in fridge

Optional: Top with sprinkles when top layer hardens
