Mashed Sweet Potatos with Leeks

Baked Red Snapper & Asparagus over mashed Sweet Potatos with Leeks

What you'll need:

  • 1/2 lb. Red Snapper
  • 6 Stalks of Asparagus
  • 1 Sweet Potato
  • 2 Leeks
  • 2 Cloves of Garlic
  • Lemon Juice
  • Lemon Pepper
  • Olive Oil, Salt & Pepper


  1. Preheat oven to 350
  2. Boil a pot of water
  3. Wash all veggies
  4. Skin potato & chop into cubes. Throw potato into boiling water and cover. Cook until soft.
  5. Chop leeks and garlic. Cut asparagus stalks in half. Place in skillet with 1 T. of olive oil, salt & pepper (to taste) and sautee until soft.
  6. Cover fish in lemon juice and lemon pepper. Bake about 20 minutes until fully cooked.
  7. Drain potatos and mash. Mix with sauteed leeks and garlic.
