Honey Lime Shrimp over Buckwheat Soba Noodles

What you'll need:

  • Buckwheat Soba Noodles

  • 1 lb. shrimp peeled and deveined

  • 1/2 C. Olive Oil

  • 4 T. Honey

  • Juice of 2 lime

  • 4 Cloves of garlic, crushed

  • Sprinkle of salt

  • Sprinkle of pepper

  • Sprinkle of crushed red pepper

Directions:

  1. Combine all ingredients in a ziplock bag and marinate for at least 30 minutes

  2. While marinating, cook Soba noodles following the directions ont the box - I only used half the noddles int he box

  3. Cook shrimp in non-stick skillet until pink, add in any veggies you like (onions & peppers), lastly add in soba noodles

  4. Mix and enjoy!
