Food from an empty fridge

For me, the hardest thing I find about cooking and living in the city is that we never go to the grocery store.  We'll run by the market on our way home from work but they dont always have everything for a recipe but more often than not, I get home or worse I wake up and come face to face with a mostly empty fridge.  I've become somewhat of a magician when it comes to whipping something up from nothing.  Nick will look around and say "We have no food", I'll look around and make an entire meal out of those mostly empty cabinets.  The other weekend the fridge contained the following:

  • 1 Avocado
  • 1 Tomato
  • A couple eggs
  • Some bacon strips


Hmmmm....what to make???


Directions:

  1. Cut avocado in half, pull out pit and remove shell
  2. Slice the top off of the tomato and gut the insides
  3. Place both in a small pan where they fit snug and wont tip over
  4. Wrap uncooked bacon strip around the outside of the tomato & avocado
  5. Crack an egg in each
  6. Cover pan and cook until egg is at the desired consistancy and bacon is crispy
  7. Top with salt & pepper and enjoy
