Egg Over Asparagus

What you'll need:

  • Asparugus - 10 or so stalks
  • 1/4 C. chopped walnuts
  • 1 Egg
  • Salt & Pepper or McCormicks Steack seasoning which I LOVE (to tatse)
  • EVOO (to taste)

Directions:

  1. Cut off the ends of the asparagus and toss
  2. Cut asparagus into thirds and throw into non-stick frying pan
  3. Saute with spices (to taste)
  4. Half way through cooking asparagus, mix in walnuts and crack an egg over the top
  5. Cover until egg is cooked sunnyside up
  6. Slide onto dish, break yolk and enjoy!
