Cauliflower Pizza Crust

What You'll Need:

  • 1 head of cauliflower
  • Wheat germ (optional)
  • Fresh Cilantro
  • Himalayan Salt (or regular salt)
  • Pepper
  • Flax meal
  • Nutritional Yeast
  • Baking powder
  • 3 Cloves Garlic
  • Any other spices you like
  • 1 Onion
  • 2 Tomatos
  • 3 Chives
  • Mozzarella Cheese (or replace with nutritional yeast)
  • EVOO
  • Lime

Crust Directions:

  1. Always wash all your veggies
  2. Cut all the veggies:
  3. Remove Stem and leaves from cauliflower and break into large chunks
  4. Slice tomatos
  5. Slice onion
  6. Chop garlic, chives & cilantro
  7. Crush himalayan salt
  8. Rice the cauliflower using a food processor, blender or a cheese grater - if using a blender be catious not to puree it. You want it to look like rice.
  9. Microwave for 8 minutes
  10. Mix in...
  11. 1 T. wheat germ
  12. 2 t. flax meal
  13. 1 t. baking powder
  14. 1/2 clove garlic
  15. Mix in Salt, Pepper, cilantro, lime juice, nutritional yeast (to taste)
  16. Grease baking sheet and roll out dough
  17. Mix the other half clove of garlic with EVOO and brush over crust
  18. Bake at 450 for 15 - 20 minutes

Topping Directions:

  1. Remove pizza from oven and top with desired toppings. I chose to layer the bottom with tomatos, topped with onions, chives, extra cilantro, garlic EVOO and mozzarella cheese.
  2. Bake another 10 minutes or so - until cheese melts and before crust burns

This came out pretty damn good!  You will need a fork and knife to eat this because the crust doesnt harden like a normal dough would (or at least mine didn't).  Will have to play with the dough ingredients a bit - let me know if you have any suggestions I could try.
