Buffalo Shrimp Quinoa

What you'll need:

  • 1 C. Plain Quinoa
  • 1 C. Spinach
  • 8 large Shrimp
  • Chives or Green Onion - to taste
  • Blue Cheese Crumbles - to taste (1/4 C.)
  • Hot Sauce - to taste (about 1/2 C.)

Directions:

  1. Cook Quinoa via directions on the box
  2. In a sautee pan, cook the shrimp & spinach with the hot sauce
  3. When shrimp is pink, add the cooked quinoa to the sautee pan and add any additional hot sauce you desire
  4. Spoon into bowls and top with blue cheese crumbles and chives
