
What you'll need:
Brown Sugar, Bourbon, Fennel Salmon
- Salmon
- Brown Sugar
- Bourbon or Whiskey
- Whole Fennel
- Lemon
- Salt
- Pepper
Summer Salad:
- Cucumber
- Avocado
- Chick Peas
- Mozzarella
- Pesto
Directions (for 2 people):
Salmon
- Preheat oven to 350
- Wash Fish and lay in baking pan
- Cover with bourbon or whiskey of choice (I used Crown Royal)
- Wash Fennel
- Chop a small handful of the fennel bulb
- Cut an even smaller amount of the fennel leaves
- In a bowl mix together the following:
- 2 - 3 handfuls of brown sugar
- Fennel bulb
- Fennel leaves
- Pinch of salt and pepper to taste
- Squeeze of a half of lemon juice
- Mix well
- Smush onto the top of the salmon so that it is covered completely
- Bake about 20 min.
- Wipe the topping off into the bourbon sauce and continue to cook until fish flakes easily (5-10 more minutes)
Summer Salad:
- Skin and cut cucumber
- Skin and cut avocado
- Rinse chickpeas
- Slice mozzarella
- Throw into a bowl
- Mix in pesto (to taste)
Fennel has a similar taste to anise which I don't particularly care for but this dish was still great so if you like that licorice flavor then you'll love this!
