Brown Sugar & Bourbon Salmon

What you'll need:

Brown Sugar, Bourbon, Fennel Salmon

  • Salmon
  • Brown Sugar
  • Bourbon or Whiskey
  • Whole Fennel
  • Lemon
  • Salt
  • Pepper

Summer Salad:

  • Cucumber
  • Avocado
  • Chick Peas
  • Mozzarella
  • Pesto

Directions (for 2 people):


  1. Preheat oven to 350
  2. Wash Fish and lay in baking pan
  3. Cover with bourbon or whiskey of choice (I used Crown Royal)
  4. Wash Fennel
  5. Chop a small handful of the fennel bulb
  6. Cut an even smaller amount of the fennel leaves
  7. In a bowl mix together the following:
  8. 2 - 3 handfuls of brown sugar
  9. Fennel bulb
  10. Fennel leaves
  11. Pinch of salt and pepper to taste
  12. Squeeze of a half of lemon juice
  13. Mix well
  14. Smush onto the top of the salmon so that it is covered completely
  15. Bake about 20 min.
  16. Wipe the topping off into the bourbon sauce and continue to cook until fish flakes easily (5-10 more minutes)

Summer Salad:

  1. Skin and cut cucumber
  2. Skin and cut avocado
  3. Rinse chickpeas
  4. Slice mozzarella
  5. Throw into a bowl
  6. Mix in pesto (to taste)

Fennel has a similar taste to anise which I don't particularly care for but this dish was still great so if you like that licorice flavor then you'll love this!
