Banana Bread

Mmmm... nothings better than mom's homemade banana bread!  But since I'm not my mom and I'll never make it as good as her, here is my twist on her recipe.

What you'll need:

  • 2 Cups of flour
  • 1 Cup sugar
  • 1 Teaspoon baking powder
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon baking soda
  • 1/2 Cup Shortening or Apple Sauce
  • 2-3 Very ripe bananas
  • 2 Eggs

Directions:

  1. Preheat oven to 350
  2. Mash up the bananas
  3. Combine all ingredients
  4. The recipe calls for shortening which is 110 claories per tablespoon so i replaced it with applesauce which is 110 calories per 1/2 cup.  So instead of adding 880 calories for shortening we kept it low cal and only added 110. 
  5. Add whatever else you think would taste good - I added walnuts
  6. Mix well
  7. Pour into baking pan
  8. Sprinkle top with brown sugar
  9. Bake for an hour and a half
