Vegan Pumpkin Cheesecake Bites

What you'll need:

  • 1 can pumpkin
  • 2 C. cashews
  • 1/2 C. Almond Milk
  • 1 T. Cinnamon
  • 1/2 t. Ginger
  • 1 t. Vanilla Extract
  • 1/3 C. Agave

Directions:

  1. Soak cashews for at least 2 hours
  2. Drain excess water
  3. In a blender mix the soaked cashews with all other ingredients
  4. blend until smooth
  5. Pour into a pan and smooth out to just 1/2 inch thick
  6. Place into the freezer for about an hour
  7. Slice into small squares and serve
